This cottage cheese pie is a great breakfast meal that is full of protein. It fills you up but it isn't too heavy, with just the right amount of sweetness.
In a large bowl, whisk the eggs until well-beaten. Add sugar, salt and vanilla.
Combine cottage cheese with semolina flour and add melted butter. Mix well and add it to the egg mixture.
Then add sour cream and shredded coconut.
Combine flour with baking powder and add it to the mixture as well. Mix thoroughly.
Bake in the centre rack of the preheated oven for 50-60 minutes or until cooked through.
Allow the pie to cool so that it thickens and serve with berries or jam of your choice.
