Juicy chicken baked with vibrant peppers and creamy mozzarella for a cozy, heartwarming meal.
Combine salt, black pepper, paprika, curry powder, and oregano in a small bowl to make a spice mixture. Cut the chicken into steaks and season them evenly with the spice mixture.
Preheat a pan and add 2 tablespoons of oil or butter. Transfer the chicken to the pan and fry on both sides for about 3 minutes each. Then transfer the chicken to a plate.
Cut the onion into rings and slice the bell pepper into julienne strips. Add the remaining oil or butter to the pan and add the onion. Sauté for a few minutes until golden brown. Add the bell pepper and a teaspoon of sugar. Cook for a few more minutes until the bell pepper softens.
Preheat the oven to 180°C (350°F).
Meanwhile, slice the mozzarella. Place the chicken in a baking tray or dish. I used a square baking dish so that all the chicken pieces are close together and come out juicier. Top the chicken with the mozzarella slices and then with the bell pepper and onion mixture. Bake for about 10 minutes.
Garnish with freshly chopped parsley or your favorite fresh herbs. And happy serving! :)
